Have you ever wondered how to capture an eye-popping mouth-watering food photograph? Well, wonder no more! Chef Dee Carruthers from Deelicious Eats will walk us through a 15-minute shredded chicken taco demo, teaching us about garnishing techniques, and how to use props to keep your food looking fresh and vibrant on the plate. Dee will cover tips for lighting, styling, and finding your aesthetic when it comes to your food photography.

For an elevated experience, follow along! Just be sure to have your ingredients scaled out and ready to go.

Chipotle Chicken Tacos with Apple Slaw

Ingredients (makes 6-8 tacos):

Chipotle Chicken:

2 tbsp oil
1/2 cup onion, diced
1 clove garlic, minced
1 – 2 chipotle peppers in adobo, minced
1/2 tsp cumin
1/2 tsp salt
1 cup crushed stewed tomatoes
1/4 cup chicken broth
3 cups chicken, cooked and shredded (you can use store-bought rotisserie chicken)
6 – 8 corn tortillas

Slaw/Garnishes:

1 cup purple cabbage, shredded
1/2 green apple, julienned
2 limes
Pinch of salt
1/2 cup crumbled feta (optional)
1/2 avocado, sliced (optional)
1 jalapeño, thinly sliced (optional)
2 tbsp cilantro, chopped (optional)

Directions:

  1. Heat oil in a large skillet over medium heat. Add onions and sauté for 2 to 3 minutes or until almost translucent. Add garlic, chipotle peppers, cumin and salt. Sauté for another 2 minutes or until aromatic and beginning to brown.
  2. Add stewed tomatoes and broth; bring to a simmer and let it reduce slightly for about 5 minutes. Add chicken and cook for another 5 minutes or until thickened and nicely coated.
  3. Meanwhile, toss together cabbage, apple, juice of half a lime and a pinch of salt.
  4. Warm tortillas in non-stick skillet or microwave. Fill each tortilla with chicken mixture, apple slaw and all the garnishes your heart desires!

Dee Carruthers of DeeliciousEats is a recipe developer and food stylist living in Toronto. Although Dee graduated from business school at Western University, three years ago, Dee decided to follow her passion for food and totally switch careers. Dee has a culinary degree from George Brown College, and she has perfected her skills cooking in one of Toronto’s top restaurants, Richmond Station. For the past year, Dee has been working in the test kitchen at THP, a Toronto based agency developing food content and media for major brands.
